There is something so cozy and glorious about the fall season. Here in my corner of the world we are blessed with four seasons and although we find ourselves counting down to summer again soon after winter hits, we can’t deny the coziness of a fall day.  It’s the perfect time to light the fire, cuddle with your favourite humans, and perhaps cook up stick to your ribs kind of meals. I was inspired today after coming in from the chilled autumn air to create this original recipe taken from my passion for pesto. Let me emphasize that like most of us, I don’t have a lot of free time to create gastronomical meals.

This recipe looks and tastes like a fancy entree at your local dining spot. But instead, it is made with simple ingredients in my fridge.

Introducing a Pecan and Avocado Creamy Pesto On Gluten Free Pasta. Tested by my hubby John and the teen and young adult in my household, it is now an approved go to meal for my family! It is fabulous paired with a chilled Pinot Grigio for  those evenings when you want to up level your dining experience.

Gluten Free Pasta with Creamy Pecan and Avocado Pesto

1 /2 cup of pecans

1/4 cup olive oil

1 garlic bulb pressed

1 half avocado

1 tbsp dried basil or 1/4 cup fresh basil

1/4 cup organic chicken stock (store-bought)

Salt and pepper to taste

Mix in food processor

Serve over your favourite cooked pasta!
