Summer isn’t over it seems ! In this part of the world mid September means cooling temperatures and warm soups as we await Autumn. But Mother Nature has a few tricks up her sleeve and instead of fall, we are experiencing mid summer weather! No complaints here!  I am doing the happy dance!

If you are like me and live in a climate that is blessed with four seasons,  you are excited to delay fall for just a little while longer. It means there is still time to host those last minute BBQ’s for friends and family and squeeze in a patio dinner date or two with your besties before the fall season kicks in.

When we think of summer we think of  freshly cut up watermelon to hydrate the thirstiest soul on a hot summer day. But did you know that August to October is the perfect time to purchase watermelon at your grocery store or local market? This is the time when watermelons are at their peak.

I will confess that this recipe I am sharing is not an original of mine but inspired by friends and a few local eateries who serve up a similar version of this unlikely combo. It is the perfect appetizer for friends and family alike.  It is so delicious that you will want to file this recipe for next summer when things warm up again.

This is truly a perfect pairing of sweet and savoury. I am obsessed! Enjoy!

Watermelon and Feta Squares

Serves 6

  • *Cut fresh watermelon into 2 inch squares
  • *Top with desired feta ( I prefer feta made with sheep or goats milk for a creamier taste)
  • *Garnish with chopped fresh basil
  • *Drizzle with balsamic vinegar
