I hope you are enjoying the lazy summer days and more quality time with your family. It may mean feeding kids more often who are home for the summer holidays or you may be entertaining on the fly for family and friends. You may be feeling at this point like you have had one too many burger meals and are looking for a little bit of of inspiration and new recipes that you can prepare quickly without too much time in the kitchen and more time outdoors in the back yard. I am here to the rescue! Here is one you can add to your repertoire.
I love this creation. It can be ready in 5 minutes and requires little cooking if you have the ingredients prepared ahead of time. The Quinoa provides a healthy protein source and the occasional canned tuna offers healthy omega 3.
 
As a tip, make a point of prepping food one night of the week. For example you can cook a large amount of quinoa and refrigerate and add to your salads, soups, or serve as a side dish. This will save you time and effort. Enjoy!

Chipotle Tuna and Quinoa Bowl

Serves : 2  Prep Time: 5 minutes

  • 1 cup of cooked Quinoa
  • 1/2 cup of red cherry tomatoes halved
  • 2 tbsp apple cider vinegar
  • 2 tbsp of olive oil 
  • A sprinkle of garlic powder 
  • Salt and pepper to taste
  • Dash of dried basil or 1/4 cup of chopped fresh basil
  • 1  can of tuna in water drained 
  • 1/4 teaspoon of Chipotle Chili Pepper (optional or to taste)

Directions:

  • Mix apple cider vinegar, olive oil, garlic powder and season with salt and pepper.
  • Let vinaigrette  stand for 2 minutes.
  • Meanwhile drain canned tuna and add chipotle chili pepper.  Mix well.
  • Combine quinoa with chopped/ dried basil, tomatoes, and vinaigrette.
  • Serve scoop of tuna atop of 1/2 cup of quinoa mixture.
  • Serve at room temperature or slightly chilled.
