I love short cuts. This two ingredient pancake idea was introduced to me by Registered Dietician Ilana Muhlstein, creator of the 2B Mindset Nutrition program. Apparently I have been living under a rock. This high protein pancake formula has been around for quite some time. So now I am making up for lost time and I make these for my family and I at least once per week!
You can add what you like to make it your own. It is a quick delicious accompaniment to your weekend morning cup of Joe. While the coffee is brewing make this quick concoction and top with your faves! A mashed banana and two eggs is all you need . Add vanilla extract and cinnamon and voila ! I topped them with Greek yogurt and frozen organic berries.
Ingredients
- 1 ripe banana
- 2 eggs
Instructions
- Mash the banana.
- Mix eggs with the banana. I use a whisk to mix them together.
- Use a hot greased pan to cook the pancakes. There are a few important tips below.
Notes
Two ingredient banana pancake tips:
- Make sure the pan is nice and hot AND greased before you pour your pancake on!
- Try not to flip it more than once, these are fragile, and don’t like being handled much while cooking and use the thinnest spatula you have.
